Hot German Potato Salad

Crock Pot Express Method
  • 6 slices bacon
  • 2/3 cup diced onion
  • 4 large cubed potatoes (I like Yukon Gold, skin on, 1 inch cube)
  • 3 T sugar
  • 3 T cider vinegar (regular vinegar is fine)
  • 1 T flour
  • 3/4 cup water
  1. Add cubed potatoes to pot with 1 cup water. Steam 7 minutes. Do a quick release and test the potatoes for doneness. You may need to adjust the steam time depending on how soft you like your potatoes. Wipe out pot.
  2. Fry bacon until crisp on saute function of pot. Add onion and saute until soft. Remove bacon and onion with a slotted spoon and aside. Reserve the grease in the pot.
  3. Make the dressing in the pot with the grease. Mix the flour, sugar, vinegar, and water together to form a slurry. Combine with the grease in the pot and simmer until bubbly.
  4. Combine with the potatoes, onions, and bacon. I combine these all in the pot and keep it on the warmer function. Serve warm.
