Irish Stew with Pork

Slow Cooker Version

⦁ 1 1/2 pounds boneless pork, cut into bite size pieces
⦁ 4-5 potatoes, peeled, cut into chunks
⦁ 2-3 carrots, peeled, cut into 2- or 3-inch lengths
⦁ 1/2 yellow or white onion, cut into chunks
⦁ 1 garlic clove, minced
⦁ 2 or 3 sprigs fresh thyme
⦁ 1 or 2 sprigs fresh rosemary
⦁ 1/2 teaspoon salt
⦁ pepper to taste
⦁ 3 oz tomato paste
⦁ 1 1/2 cups beef broth
⦁ 1/4 cup flour
⦁ 6 oz dark beer, stout or porter

⦁ Add pork, carrots, and potatoes to slow cooker.
⦁ Add onion, salt, pepper, and garlic, lay herb sprigs on top.
⦁ Add tomato paste and beer.
⦁ Whisk flour with cold beef broth and add.
⦁ Cover and cook on low for 8 hours.
