It started snowing here at 6 AM. It is still snowing 10 hours later, so we decided maybe today was a good day to just hole up and stay warm. Normally that is not what we do, we go do whatever we want in whatever type weather. Rebels, I tell ya! But – what do I do when we stay in instead? Make a mess in the kitchen of course!

I started this Irish Stew yesterday, I had a pork loin roast out and didn’t really want to roast it in the oven, I was getting a stew vibe from it. I normally don’t do pork, I’m not a huge fan of pork chops, loin, etc. But I do love me some ribs, ham, and bacon – duh, who doesn’t like bacon? Even just a tiny bit?

Anyway, I usually use beef for stew but I figured there would be something out there in Pinterest-land for pork stew. I don’t know why it didn’t cross my mind to look for Irish Stew, but it didn’t, fortunately I stumbled across a couple recipes for it. So I meandered down that internet path and found a couple that sounded good, mashed them together and came up with what is pictured above.

What is stew without bread? Bread is the perfect conveyance for getting all that great gravy soaked up and into your belly. I didn’t really want to do a shaped loaf or knead it, even though I usually let my Kitchenaid do all the work. The Cheddar Batter Bread recipe I found at Taste of Home, fit what I was looking for.

It came out of the oven, oozing hot cheese and golden brown. I couldn’t wait for it to cool. I gave it 5 minutes tops, just long enough to dish up the stew. It was delicious, from the first bite of vegetables and pork, to the last swipe of the bread through the gravy. If you are looking for something tasty, try these.
