- 1 C sugar
- 1 egg
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1 tsp baking soda
- 1/2 C softened butter
- 1/4 C milk
- 1 tsp vanilla
- 2 C flour
- 4 mashed bananas
Preheat oven to 350F, grease and flour 2 loaf pans.
Cream sugar and egg. Add salt, baking powder, baking soda, and butter to sugar mixture. Add milk and vanilla, then add flour. Stir until just barely mixed, then add mashed bananas and combine by hand – do not overmix.
Pour into pans and bake 45-50 minutes until well browned and the toothpick test comes clean.
- I added a 1/2 C Sourdough discard, it made this bread even more moist and gave it a depth of flavor.
- I also added mini chocolate chips for a little extra decadence. You could add your favorite type of nuts as well.
