- 6 slices bacon
- 2/3 cup diced onion
- 4 large cubed potatoes (I like Yukon Gold, skin on, 1 inch cube)
- 3 T sugar
- 3 T cider vinegar (regular vinegar is fine)
- 1 T flour
- 3/4 cup water
- Add cubed potatoes to pot with 1 cup water. Steam 7 minutes. Do a quick release and test the potatoes for doneness. You may need to adjust the steam time depending on how soft you like your potatoes. Wipe out pot.
- Fry bacon until crisp on saute function of pot. Add onion and saute until soft. Remove bacon and onion with a slotted spoon and aside. Reserve the grease in the pot.
- Make the dressing in the pot with the grease. Mix the flour, sugar, vinegar, and water together to form a slurry. Combine with the grease in the pot and simmer until bubbly.
- Combine with the potatoes, onions, and bacon. I combine these all in the pot and keep it on the warmer function. Serve warm.
